Panna Cotta

For our second session of “Cooking with Kristy,” she decided to teach me how to make a super easy dessert that’s light and simple!  I’ve never tried Panna Cotta before and for some reason whenever I would see it on the menu, I would never consider ordering it because I’d rather have the ice cream, apple tart, or chocolatey dessert.  So to my surprise, when Kristy made it for work one day and brought me some leftovers, I decided to try a taste and immediately was HOOKED!  It was so light and refreshing especially with the fresh strawberries on top.  And then I found out the recipe only called for 5 ingredients!!! Even better!  This could be my “go-to” for dinner parties and packaged in cute mini mason jars too!

Ingredients: (Okay, maybe more like 7 ingredients…)

  • 1 envelope unflavored gelatin (about 1 tablespoon)
  • 2 tablespoons cold water
  • 2 cups heavy cream
  • 1 cup half and half
  • 1/3 cup sugar
  • 1 1/2 teaspoons vanilla extract
  • 1 tablespoon of lemon zest

Preparation:

Sprinkle gelatin over water and let it soften in small saucepan

Heat gelatin mixture over low heat until gelatin is dissolved and remove pan from heat

In a large saucepan, stir cream, half and half, and sugar just to a boil over moderately high heat

Remove pan from heat and stir in gelatin mixture, vanilla, and lemon zest

Chill ramekins, covered, at least 4 hours or overnight.

Chop any fresh berries (add some sugar for sweetness) and place a little on top
