With St Patrick’s Day around the corner, I’ve been craving a Shamrock Shake from McDonald’s but never ordered one because the calories always scared me away! But after browsing Pinterest, I found a recipe that seemed healthy with ingredients that I liked and had in my fridge and freezer already =) If you’re craving something minty and sweet, this recipe took 5 minutes to make and is only 238 calories vs 540 calories from McD’s!
Makes one serving:
1 medium banana (frozen tastes better)
1/2 cup coconut milk, light, unsweetened
1/2 cup greek yogurt, plain
1 or 2 Thin Mint Girl Scout Cookies
2 drops mint extract
3 drops green food coloring (for a fun green color)
Directions:
Place all ingredients in a blender and process until smooth. Then add some fat free whip cream and sprinkles!
Since I had so much fun dipping pretzels in white chocolate for Valentine’s Day, I decided to create the same thing for St Patrick’s Day. This time I was better prepared and went to Moskatel’s in DTLA and chose a variety of green chocolates to melt. I also picked up some fun green sprinkles and topped everything with it since sprinkles make everything look so much prettier!
Last but not least, I took some thin mints (frozen) and took my favorite ice cream (from McConnells) and smashed them together to join a perfect little combination of flavor and fun! Hope you are able to start your St Patrick’s Day fun this weekend!
